Grain-Free Banana Pancakes

I hope this recipe serves you all well!  It’s another super easy and super healthy recipe anyone can make in a flash.  Let me know what you think!

Grain-Free Banana Pancakes

Ingredients:

  • 2 whole eggs
  • 1 small banana
  • cinnamon, to taste
  • 1/2 tsp vanilla extract
  • stevia, to taste
  • coconut oil

Directions:

Over medium heat, grease the bottom of a skillet with about 1 tsp of coconut oil.  Mash the banana in a bowl and mix the remaining ingredients together thoroughly.  Pour batter onto the skillet and cook about 2-4 minutes on each side.  Top with 1/2 – 1 T coconut oil, ghee, or grass-fed butter and sprinkle with cinnamon to taste.  That’s it!
